I thought it was a little overdue, a bit cart before the horse, to launch the more personal side the blog here and neglect to properly introduce myself.

Prompted by the “about me” prompt at the #fmsphotoaday challenge, I thought I would elaborate on my pictorial contribution, pictured top left, and tell you a little more about me.

So, on the image above:

  •  I like the colour lime, photography and cooking, and eating
  •  I like stationery and writing.
  • I’m an only child.
  • I am addicted to Snapseed and its Retrolux filters.
  • And I have this great big piece of ticking fabric for no apparent reason.
  • Married to a wonderful bloke who is very supportive of everything I do and happily joins in on any adventure
  • I work in the media.

Also:

  • I have two sons ~ aged 10 turning 11 and 8 turning 9. They are actually only 18 months apart, this is both good and bad.
  • I work full-time, in newspapers. When I’m not there, I’m here at Lime Lane or working with my other hat on as part of our freelancing company.
  • The ticking fabric is a mystery because I don’t sew, not a stitch. Thankfully the Mr can do buttons.
  • I’m more than happy with my own company, I’m a classic introvert and happily would spend the week at home with no place to go.

I’ll be the first to admit lunch would be my most oft-skipped meal of the day. Usually because I have a late breakfast after the kids have gone to school and it would classify as more of a substantial brunch. And I’m a savoury rather than a sweet tooth so it suits me better.

So when Baker’s Delight asked me to contribute something for their recipe bank for lunch, I had to put my thinking cap on.

I love a good pizza ~ margherita please, tomato base with lashings of bocconcini and extra cheese ~ and a good toasted sandwich {my present fave is avocado, baby spinach, goats’ cheese and cheddar cheese!}

But I kept coming back to an absolute staple of mine ~ for any time of day.

Bruschetta.

I’m a huge bruschetta fan, starting with the classic tomato and basil. But I thought I’d better take it up a gear for this exercise.

So say hello to the super salmon bruschetta. Why “super”? Because with this combo, you can partake of up to four super foods in one tasty swoop!

The key to bruschetta is fresh, tasty ingredients. And naturally your bread is the foundation of what it is built.

In this case I used sourdough bread, because I’m on a bit of a sourdough kick at the moment, and hey, super food. But ciabatta, pane de casa or any artisan bread will do just as well. Take your pick. Or make mini ones with a french stick!

Ingredients
  • Oil ~ for brushing
  • Your choice of bread, sliced thickly
  • Garlic cloves
  • Classic:
  • Tomatoes
  • Basil
  • Red onion
  • Salt + pepper to taste
  • Grab what you need to cater for numbers and taste. But don't go too heavy on the onion. For an individual serve, you only want a thin slice.
  • Super salmon + avocado:
  • Avocado ~ mashed for spreading
  • Salmon ~ smoked, fresh, canned {I like the skinless and boneless cans}
  • Baby spinach or rocket
  • Salt + pepper to taste
Method
  1. Quarter your tomatoes and scoop out the seeds and pulp {which I give to my chickens} leaving the flesh.
  2. Dice the tomato flesh and onion, tear up the basil and combine in a bowl. Season to taste. Splash in a bit of extra virgin olive oil if you are so inclined.
  3. Brush your slices of bread with oil and cook on a chargrill. You can also just toast your bread (no oil!) or grill or oven bake.
  4. Smash your garlic with the blade of your knife and rub over the warm bread. That delicious garlic smell should rise up to meet you.
  5. Top with your tomato combo, and serve!
  6. Or top with the avocado, spinach or rocket and salmon, season to taste, add a little lemon or some extra herbs if you like. I added some capers for a salty hit, and serve!

 

Lessons from penguins

The eldest is learning all about Antarctica this term at school. I don’t know his teacher overly well but she is obviously all sorts of fabulous and engaging as he is taking it all in.

This morning while making lunches, he was telling me all about the movie they watched yesterday, and you’ve probably heard of it: March of the Penguins. He was recounting some of the scenes: how the chicks don’t so much waddle as run, and how sad it was when one of the chicks had died but all the other penguins have gathered around the mum and dad to comfort them.

Later in the car I got a whole lecture on the scourge that is plastic bags on our environment, including a comparison to China which has a much larger population but less plastic bags and how baby turtles think the bags are food and choke and die on them.

But hey, learning!

Back to the penguins.

So this morning I came across this delightful video of penguin bloopers from Penguins Spy in the Huddle and had to bookmark it to show him later.

It’s undeniably cute as they navigate the slippery ice and rock shelves with a few thrills and spills but you also notice one thing: they pick themselves up and carry on.

We could learn a lot from those penguins.

Slugs and snails, And puppy-dogs’ tails …

Yes, raising boys is certainly an adventure of the good and the grimy.

I have two boys, each more different than the other while being so much the same. Chalk and cheese. Very much so.

Thankfully I don’t have to learn the best way to plait hair each morning, but I do have to know how to kick a football.

And along the way we deal out lessons in respect and sportsmanship, on friendships and manners.

I love the simple lessons in this ~ 20 things a mother should tell her son ~ which I came across via Facebook.

Some are for now, some will be put away for later.

This week though, they should remember this:

Use careful aim when you pee.  Somebody’s got to clean that up, you know.

And I hope they never forget this:

Remember to call your mother because I might be missing you.

I posted these corn fritters on Instagram the other week ~ I think they filled the “I made this” prompt for the photo a day challenge.

They are such a simple and quick recipe and perfect for any meal of the day ~ I like them for brunch ~ and as long as you have a can of corn in the pantry, you whip them up in anytime.

Cam asked me for the recipe so have included that below. It’s based on a Michelle Bridges recipe I ripped from the pages of the Sunday Life magazine. Sometimes those clippings come in handy.

Recipe type: Brunch
Ingredients
  • 1 410g can of corn
  • 2 eggs
  • ½ cup self-raising flour
  • ½ cup of milkl
  • 1 spring onion, chopped
  • cooking spray
  • herbs
Method
  1. Whisk the eggs in a bowl. Add corn, flour, milk and onion.
  2. Mix until combined. Season to taste.
  3. Spray a non-stick frying pan and place over a medium-high heat.
  4. Using a small measuring cup, drop heaped measures of your mixture in the frying pan in batches.
  5. Cook for three to four minutes on each side until golden and cooked through. Don't make them too thick or they won't cook through.
  6. Serve garnished with some herbs and whatever else takes your fancy.

A Day on the Green, All Saints winery, Wahgunyah

Lucky for us, we have friends who like to  do things and invariably encourage us along for the ride, which is how we ended up at A Day on the Green at All Saints Winery in Rutherglen on the weekend.

And boy am I glad we did. A fabulous show including Lisa Mitchell, Mark Seymour and the Undertow and Neil Finn and Paul Kelly.

After many a false start last year, I’ve actually managed to complete the photo a day challenge for January, which has spurred me on for the rest of the year.

“Berry” fun afternoon

If you popped into Quotidien or follow me on Twitter you would know that yesterday we hopped in the car for a little road trip and went berry picking. A great diversion for a holiday afternoon, the small ones are berry fans and loved the idea of picking their own. The farm had a great selection too of raspberries, brambleberries, blueberries among others. You got your bucket and off you traipsed among the bushes, popping a few samples in your mouth as you went along.

There was also a lavender hedge filled with butterflies and buzzing bees, I’ve never seen so many butterflies in the one place outside the centre at the zoo. And the best part, we have fresh berries to pop on our cereal and cook some delicious treats with this week.
